This past Sunday I spent an hour making 6 dinners…yup in only one hour, including prep and clean-up. I had two recipes that both called for browned ground beef, so I did some browning and then split it up. I put all the ingredients for spaghetti sauce in a big pot to simmer while I made up enchilada casseroles. In the end, I had dinner for Sunday and Monday nights and four more ready for the freezer. I LOVE having meals made and in my freezer ready to go for those busy weeks that I know I will not have as much time to cook as I wish.
I was making dinner anyway, so it was not hard to double up recipes and get it all done at once.
Next time you are making something like spaghetti sauce, lasagna, enchiladas, taco soup…or whatever…double up (or even triple), store in freezer bags or disposable containers and you will be all set. If you are like me and have a husband who does not do well with leftovers, then split your recipe in half for two dinners...this is what I do for lasagne.
